Lemon Goji Bars Recipe

DIRECTIONSPreheat oven to 350°F. Using a mixer, beat together butter, sugar, flour, Immunity Blend and salt until well combined. Press dough in an even layer into a parchment-lined pan and bake for 20 minutes. Mix together eggs, lemon juice, lemon zest, flour and sugar until just combined. In a separate bowl, soak goji berries in water. Remove crust from oven and pour lemon layer over crust. Top with soaked goji berries and bake for 20-25 minutes at 325°F. Remove from oven and allow to cool completely. Once cooled, transfer to fridge to set for 2 hours. Slice and serve cold with a dusting of powdered sugar!
