Luteal Phase Brownies

The luteal phase is more than just a phase—it’s an important time to nourish and support your body. These gooey, fudgy, cacao-packed brownies are a delicious, nourishing treat made with sweet potato, almond butter, and maple syrup. Whether you’re in your luteal phase or simply craving something chocolatey, there’s plenty here to love.

INGREDIENTS

1 medium sweet potato
½ cup runny almond butter
½ cup maple syrup
2 eggs
¼ tsp. vanilla extract
½ cup Navitas Organics Cacao Powder
¼ tsp. baking soda
Lot of chocolate chips

DIRECTIONS

Preheat your oven to 350°F. Bake the sweet potato for about 45 minutes, or until very soft. Peel the skin off the sweet potato and add it to a large bowl. Mash with a spoon until smooth. Add the almond butter, maple syrup, eggs, and vanilla to the same bowl and mix well. Add the Cacao Powder and baking soda, and mix until everything is well combined. Fold in chocolate chips. Line an 8x8-inch baking dish with parchment paper and pour in the batter. Top with extra chocolate chips. Bake at 350 for about 35 minutes, or until a tester comes out clean. Let the brownies cool completely. For the topping, melt chocolate chips with a spoonful of coconut oil and stir until smooth. Spread the melted chocolate over the brownies and enjoy!
