Oatmeal Acai Yogurt Cups

These dreamy cups are a nourishing, feel-good breakfast or snack that delivers both flavor and function. Made with wholesome oats, creamy yogurt and antioxidant-rich superfoods, they provide lasting energy and vibrant nutrition in every bite. 

INGREDIENTS

Oatmeal Cups:
2 ripe bananas, mashed (about ¾ cup mashed)
1½ cups gluten-free oats
¼ cup pure maple syrup
2 Tbsp. coconut oil, melted
1 tsp. cinnamon
¼ tsp. salt

Acai Yogurt:
1 cup non-dairy yogurt 
1½ Tbsp. Navitas Organics Acai Powder
1 scoop vegan vanilla protein powder (optional) 

Toppings:

Fresh berries

Navitas Organics Mulberries

Navitas Organics Cacao Nibs

DIRECTIONS

Preheat oven to 350°F. Spray a muffin pan or use a silicone muffin pan.
In a medium mixing bowl, combine mashed bananas, oats, maple syrup, melted coconut oil, cinnamon, and salt. Stir until well combined.
Scoop oat mixture into muffin pan, using about ¼ cup per well. Use spoon to press mixture into bottom and sides, with space in middle, to create a cup.
Bake for 30 minutes or until firm and lightly golden brown. Let cool for 10 minutes before removing from pan.
In a bowl, stir together yogurt and acai powder until completely combined. Spoon mixture into oatmeal cups.
Top with fresh berries, mulberries and cacao nibs. Enjoy!
