Ingredients
- 2 ripe bananas, mashed (about ¾ cup mashed)
- 1½ cups gluten-free oats
- ¼ cup pure maple syrup
- 2 Tbsp. coconut oil, melted
- 1 tsp. cinnamon
- ¼ tsp. salt
- 1 cup non-dairy yogurt

1½ Tbsp. Navitas Organics Acai Powder
- 1 scoop vegan vanilla protein powder (optional)
- Fresh berries

Directions
- Preheat oven to 350°F. Spray a muffin pan or use a silicone muffin pan.
- In a medium mixing bowl, combine mashed bananas, oats, maple syrup, melted coconut oil, cinnamon, and salt. Stir until well combined.
- Scoop oat mixture into muffin pan, using about ¼ cup per well. Use spoon to press mixture into bottom and sides, with space in middle, to create a cup.
- Bake for 30 minutes or until firm and lightly golden brown. Let cool for 10 minutes before removing from pan.
- In a bowl, stir together yogurt and acai powder until completely combined. Spoon mixture into oatmeal cups.
- Top with fresh berries, mulberries and cacao nibs. Enjoy!
