Superberry Citrus Quinoa Salad Recipe

Juicy citrus, protein-rich quinoa and a medley of tangy goldenberries and sweet goji berries come together for a colorful dish that’s as nourishing as it is delicious. Packed with antioxidants, fiber and plant-based protein, it’s the perfect salad to energize your day!

INGREDIENTS

3 cups cooked quinoa 
1 can chickpeas, drained and rinsed
1 cup cucumber, finely diced 
1 cup crumbled feta
10 fresh mint leaves, chopped
1 cup Navitas Organics Goldenberries
½ cup Navitas Organics Goji Berries 
Avocado, cubed (optional)

Citrus Vinaigrette:
1 orange, squeezed 
4 Tbsp. extra virgin olive oil
½ tsp. salt 

DIRECTIONS

In a large bowl, mix quinoa salad ingredients together. 
Whisk Citrus Vinaigrette ingredients together in a small bowl and pour over quinoa salad.
Toss well and serve.
