- 3 cups cooked quinoa
- 1 can chickpeas, drained and rinsed
- 1 cup cucumber, finely diced
- 1 cup crumbled feta
- 10 fresh mint leaves, chopped

- Avocado, cubed (optional)
- 1 orange, squeezed
- 4 Tbsp. extra virgin olive oil

Directions
- In a large bowl, mix quinoa salad ingredients together.
- Whisk Citrus Vinaigrette ingredients together in a small bowl and pour over quinoa salad.
- Toss well and serve.
