Chocolate-covered Strawberry Smoothie Bowl

Thick, creamy and decadently chocolatey, this smoothie bowl is a feast for the senses. Crunchy cacao nibs, a drizzle of melted chocolate and chocolate-dipped strawberries add layers of texture and indulgence to every spoonful, making it a guilt-free treat that feels like dessert.

INGREDIENTS

1 banana, sliced & frozen
1 cup frozen cauliflower rice
1 cup frozen strawberries
½ cup milk of choice 
1-2 scoops vanilla protein powder, optional
2 Tbsp. Navitas Organics Cacao Nibs, divided
2 Tbsp. Navitas Organics Semi-sweet Cacao Wafers
¼ tsp. coconut oil
2 fresh strawberries

DIRECTIONS

Add banana, cauliflower rice, frozen strawberries, milk, protein powder, and all but 1 tsp. cacao nibs to a high-powered blender. Blend until thick & smooth, adding more milk if needed.
Transfer smoothie to a bowl and place in freezer for 5-10 minutes to firm up.
Using either a double boiler or microwave, melt together cacao wafers and coconut oil, stirring frequently.
Dip fresh strawberries into melted chocolate and place on parchment paper until set.
Remove smoothie bowl from freezer. Use any leftover melted chocolate to drizzle over top. Garnish with remaining cacao nibs and chocolate-covered strawberries. Enjoy!
