Goji Berry Peanut Butter Cups

These rich, chocolatey bites are a superfood twist on the classic candy—made with creamy peanut butter, antioxidant-packed goji berries and smooth, dairy-free chocolate. Sweet, salty and secretly nourishing, they’re everything you love about peanut butter cups, but better.

INGREDIENTS

1 cup Navitas Organics Bittersweet Cacao Wafers 
½ cup peanut butter 
Pinch of sea salt 
2 Tbsp. raw honey 
2 Tbsp. coconut oil
¼ cup Navitas Organics Goji Berries
Flakey sea salt

DIRECTIONS

Line a muffin tin with parchment paper liners. 
Melt ½ cup Bittersweet Cacao Wafers with a ½ Tbsp. coconut oil and pour ½ Tbsp. into each muffin liner. Place in freezer for 5-10 minutes or until chocolate is solid.
In the meantime, mix peanut butter, honey, sea salt, and 1 Tbsp. melted coconut oil in a bowl until smooth and creamy. Remove chocolate from freezer and add ½ Tbsp. peanut butter mixture to each cup. Sprinkle with goji berries and place back in freezer for 20 minutes.
Melt another ½ cup Bittersweet Cacao Wafers with a ½ Tbsp. coconut oil.  Pour ½ Tbsp. over each cup, top with goji berries and flakey sea salt.
Place back in freezer for 30 minutes to an hour before enjoying.
