Immune-Boosting Elderberry Cottage Cheese Ice Cream

Packed with the goodness of elderberries, known for their immune-boosting properties, and the creaminess of cottage cheese, this frozen delight is both indulgent and nourishing.

INGREDIENTS

32 oz. cottage cheese
¼ cup pure maple syrup
1 tsp. vanilla extract
2 Tbsp. lemon juice
1 banana
2 tsp. Navitas Organics Elderberry Powder
Lemon zest, to top (optional)

DIRECTIONS

In a high-speed blender or food processor, blend all ingredients until smooth. You may need to stop the blender and scrape down the sides and then continue blending, to get all of the Elderberry Powder mixed in.
Pour cottage cheese mixture into a 5x9 loaf pan, spreading it out evenly. (Optional) Top with banana and lemon slices.
Place flat in the freezer for at least 3 hours, until frozen through.
Allow ice cream to thaw for about 10 minutes before serving. Top with lemon zest if preferred. Enjoy!
